The versatile Chickpea!

This nutty flavored bean is a favorite of North Indian cuisine.It is the same bean used in making Hummus. Chickpeas are best cooked by soaking overnight in water followed by boiling/pressure cooking until tender. Canned chickpeas are a good time saver resource.
